BRUT Blanc de Blancs 2016

Maison Jussiaume Brut Blanc de Blancs 2016 is an extremely limited release, produced following the traditional Champenoise method of production.

Handcrafted, exclusively with Chardonnay fruit from Del Rio Vineyards, this Cuvée is defined by its freshness, elegance and complexity.

Winemaking NOTES:

The grape “press” is where the life of the wine begins. It begins gently, with pressure gradually increasing to extract the purest juice.

Precise fermentation is crucial to the quality of sparkling wine. Proper fermentation provides the desired delicate and fine bubbles.

After the initial fermentation in a tank, a second one takes place in the bottle, over the course of months at a cool, even temperature.

At least 17 months of “Lees ageing” is next, further contributing to the wine's complexity, and adding finesse to the bubbles.

Riddling follows; and  finally, each bottle is disgorged by hand and  Dosage is added to give the wine its special taste and quality.

Tasting Notes:

ON THE EYE:     Pale gold with slight green highlights. Fine and persistent effervescence.
ON THE NOSE:     Pure, concentrated and expressive, with aromas of fresh Apple, Melon and Ruby Pomelo.
ON THE PALATE:      The attack is dynamic, full, elegantly textured with aromas of lemon, fresh dough and Hazelnut.
